Coriander's a winter herb, so while we have basil pesto in the freezer from summer, it's always great to use up excess coriander in the colder months.
This is coriander, toasted almond slithers, garlic and olive oil.
I add cheese and salt when I cook with it. Frozen cheese - no.
I don't think it's as good as basil pesto but it's a great break from stodgier winter food.
